I posted the recipe for tomato soup and home made croutons a while back. This is the same soup, taken up a notch.
I made grilled cheese sandwiches (sourdough bread, earth balance and go veggie american slices), let them cool then cut into cubes. I tossed them in granulated garlic and vegan parmesan then put them in the oven and baked just enough to warm through and brown the parmesan just a bit. These became the ultimate croutons. With a little dollop of sour cream….heaven in a bowl.
