Chocolate chip and toasted coconut vegan ice cream

Vegan ice cream is so easy….if you have an ice cream maker.

The ingredients are simple.

Canned full fat coconut milk
Xantham gum (this is a super cheap thickening agent that any vegan should keep on hand)
Agave or maple syrup
Cocoa powder
Hershey’s syrup
Mix it all up, put it in the fridge for several hours, then run through the machine for about 20 minutes.

Any toppings should be added at the end.

I folded in mini vegan chocolate chips and toasted coconut.

This is good.
