Buffalo chicken and cucumber jalapeno soup

Grilled potatoes
Thick sliced, unpeeled, russet potato brushed with olive oil and salt and pepper and grilled until crisp on the outside.

Buffalo chicken
Gardein Chick’n Scallopini grilled then smothered in Franks Buffalo sauce.

Buffalo green beans
Fresh green beans, washed and trimmed. Drizzled with olive oil then tossed with crushed up buffalo flavored pretzel bites. Baked until crispy.

Cucumber jalapeno soup
I’m not really into cold soup, but the flavor was great. I used a melon baller to hollow out two lemon cucumbers. I put the insides of the cucumbers in the blender with a few jalapenos, fresh lemon juice, fresh dill, a little bit of onion, a teaspoon of veganaise and some salt and pepper. It was refreshing with the spicy buffalo chicken and green beans.
