Gardein has an amazing line of delicious vegan products. I use their “chick’n scallopini” to make this fried chicken. I stumbled upon the recipe late one night, browsing random vegan websites. You use rice paper to wrap the chick’n before breading and frying to make a “skin” on the chicken, its a little creepy, but turns out amazing.
I fell in love with collard greens this year also. Slow cooked in veggie broth with a little vegan bacon and some liquid smoke…so good.
